Role Description The Head Sushi Chef is a full-time, on-site role based in Washington DC, Capital One Arena, responsible for leading sushi kitchen operations and ensuring high-quality food production. This role oversees menu execution, daily food preparation, and sushi bar service, including responsible handling of seafood, rice, and specialty ingredients. The Head Sushi Chef trains and supervises kitchen staff, manages station setup and breakdown, and enforces strict hygiene, safety, and food handling standards. Day-to-day tasks include planning and organizing service, monitoring inventory and ordering supplies, maintaining equipment, and collaborating with management on menu updates and special event offerings. The role also focuses on maintaining consistent presentation, taste, and timing while delivering a premium guest experience in a high-volume environment.

Qualifications

• Strong culinary skills with expertise in Food Preparation, Cooking, and sushi-specific techniques.
• Deep knowledge of Seafood selection, handling, and storage to ensure freshness and safety.
• Commitment to Hygiene and food safety standards, including proper sanitation and compliance with health regulations.
• Advanced Culinary Skills in Japanese cuisine and sushi, including knife work, rice preparation, and plating.
• Previous experience as a lead or head sushi chef in high-volume or upscale environments.
• Ability to train, supervise, and schedule kitchen staff while fostering a respectful, team-oriented work culture.
• Strong organizational and time-management skills for coordinating service and event demands.
• Flexibility to work evenings, weekends, and event-based schedules as required.
• Culinary degree or formal culinary training preferred; equivalent professional experience will be considered.
